Most people love Costco. I’m apparently not most people. I like to get in and out. Samples, no thank you. A guy with a microphone trying to sell me a 400 dollar mixer, I’ll pass. However, they do have great deals on diapers, K-Cups and Clorox wipes, so I go.
The other day something awesome happened at the super store…inspiration. I saw one of their pre-packaged frozen meals that said “Spinach Artichoke Stuffed Chicken” and that’s what we had for dinner that night. Except I made this one. If you like spinach artichoke dip, you’ll like this recipe. I’m bringing it to the Novice Gardener’s Fiesta Friday. If you haven’t been yet, you should check it out!
Spinach Artichoke Stuffed Chicken
Prep: 25
Total: 45
Serves 4
Ingredients:
4 Chicken Breasts
1/2 Cup of Spinach, Chopped, Cooked and Drained
1/2 Cup of Artichoke Harts, Chopped and Drained
3/4 Cup of Parmesan Cheese
1 Oz. of Cream Cheese
2 Tablespoons of Mayo
Garlic Salt and Pepper to Taste
Olive Oil for the Pan
Directions:
Pre Heat the oven to 375 degrees. In a bowl mix together: spinach, artichokes, parmesan cheese, cream cheese, mayo, garlic salt and pepper and set aside. Cut a pocket in your chicken breasts. and stuff the chicken with the spinach mixture. Secure with toothpicks. In a cast iron skillet, cook the chicken for about 3-5 minutes on each side until golden brown. Transfer the skillet to the oven and for about 10 more minutes until done. Serve with pasta with marinara sauce.
